Caramelized Pork Tacos

We had the most amazing dinner last night. It was one of those nights when we had everything we needed, the flavors blended together perfectly, and it was so tasty, I didn’t even have time to snap a photo.

I found this recipe on one of my favorite blogs for delicious food – Pinch of Yum. The name grabbed me right away – Caramelized Pork Tacos with Pineapple Salsa. I love anything with pineapple – yes, even pineapple on my pizza!

These tacos are so tasty! I just cut up pork chops and followed the directions exactly. I will warn you that if you’ve never cooked with fish sauce before – it definitely has a pungent odor. It’s honestly a little scary how smelly it is, but when combined with the perfect ingredients, it creates a beautiful umami flavor.

Make sure to turn up the heat in your pan to really get the pork caramelized. I used a cast iron skillet and the meal came together so quickly! It probably took me longer to cut the fresh pineapple than it did to cook the meat.

The flavor profile was so tasty. The sweet and salty pork, with fresh fruit salsa, and a little Sriracha mayo on top for a kick – it was perfection rolled up in a tortilla shell.

Taco Reflections

Speaking of tortilla shells, I think next time, I might have to run over to the Mexican grocer to pick up fresh corn tortillas. We used store-bought flour tortillas that worked well, but I think a fresh tortilla would be amazing.

Oh, and don’t forget to have a mint mojito on the side. It’s the perfect pairing of caramelized pork tacos and mojitos! I have a feeling this will be added to our dinner rotation. And this is something that I can see us making for an outdoor dinner party – super easy and delicious. Now, if we could all get vaccinated so COVID could go away!

    I’m going to add this to my list as well! I have to hold my nose when I use fish sauce but it’s worth it because it tastes great. I made a thai pork dish the other night that uses it as well, so good though!
