Top Ten Tuesday: Favorite Recipes
I love to cook; if you’ve been a reader for a while, I’m sure you already know. I think cooking might actually be my love language. I love finding new recipes to try and often surprise myself with great flavors and new favorites. My partner and I often lean toward a more vegetarian base of recipes, but we also eat meat, so you’ll find a little bit of everything in this list of some of my favorite recipes.
My favorite recipes are full of flavors – I definitely like spice! I don’t want something to be so spicy I can’t enjoy the flavor, but I do love deep, rich flavors. The most used ingredients in my kitchen tend to me garlic (the more the better), ginger, and onions. We lean toward a lot of Asian recipes with rice or flatbread as a base. But, I also love a delicious taco (I mean, who doesn’t?). Some of these recipes were things I tried on a whim and surprised myself with how much I enjoyed the flavors. So, don’t discount them just by the title or what I have to say, give them a chance.
My go-to places for delicious recipes are Cookie & Kate, a blog filled with delicious vegetarian recipes that can be adapted for everyone, and Pinch of Yum with a lot of tasty comfort food type recipes that I love. These are just a few of my favorites recipes that I have on repeat at home!
Favorite Recipe
Carmelized Pork Tacos with Pineapple Salsa – Pinch of Yum
Okay, I’m going to tell you right now, if you’ve never cooked with fish sauce before be absolutely ready for a horrible smell – it’s awful! But, I promise, just follow the recipe because the flavor is amazing, with that tasty carmelized umami pork and the fresh pineapple!
Coconut Curry Noodle Bowls – Pinch of Yum
I love a noodle bowl! Especially when the base is a slurpy curry broth! Recipes like this one are great because you can add whatever your family loves – change up the vegetables, add a little more protein, make it to fit your flavor profile.
Easy Brown Rice Risotto with Mushrooms – Cookie & Kate
This risotto is a game-changer. The perfect recipe for guests because you don’t spend too much time stirring like a typical risotto, it actually bakes in the oven! The flavors are so rich and deep. Serve it up with a nice crisp green salad and maybe a little bread on the side and you’ve got a “fancy” dinner for friends or date night!
Easy Homemade Ramen Bowls – Killing Thyme
When I was younger, I probably could have survived on those cheap ramen noodles. Now, my palate is a little more refined, and let’s face it, I need to eat a little more healthily. This is a simple recipe that elevates the ramen noodles and I promise you won’t look back. Again, this one can be adapted to whatever works for you!
Falafel Stuffed Pitas – Cooking Lite
I love this recipe because the falafel is actually made into patties that work so well for stuffing pitas! I also make a quick tzatziki sauce for a little creaminess. Pull out the food processor and this recipe comes together really quickly and is perfect for a weeknight dinner.
Moroccan Vegetarian Carrot and Chickpea Tagine – The Spruce Eats
I literally just made this recipe last night for dinner and it was absolutely amazing. I like to serve this main dish with pearl couscous and lots of naan to soak up all the amazing flavors. Just a quick warning – turmeric stains pretty much everything, so make sure to use kitchen utensils that you don’t mind having a deep yellow hue to after cooking. (It usually fades after a few more uses, but a warning nonetheless).
Ridiculous Baked Gnocchi with Vodka Sauce – Pinch of Yum
If you’re looking for a decadent, comfort food recipe, look no further than this amazing recipe. Although the recipe calls for gnocchi kits (where you actually make the gnocchi), I just grab a couple of packages of gnocchi in the refrigerated cases in the deli area of our grocery store. Open a bottle of wine, with a nice salad and some bread and you’ve got an amazing meal.
Roasted Cauliflower and Lentil Tacos – Cookie & Kate
Don’t knock it before you try it! This recipe is absolutely amazing! I tried this one when we first started trying to eat a more green diet and wasn’t sure how I was going to feel about it, but oh my gosh, it’s phenomenal. Roasted cauliflower is so good and add some creamy taco-seasoned lentils and you’ve got a taco to die for. (I always double the amount of cauliflower because it shrinks as it roasts and we love it so much). Don’t forget about the chipotle sauce to top it off!
Sarah’s White Chicken Chili – Pinch of Yum
This recipe is for a day you don’t care about the calorie count for sure! As the recipe says, it’s almost more of a chip dip at times, but the flavor of the smoky bacon, the creaminess of the cream cheese, it’s perfection in a bowl!
Summer Berry & Burrata Salad – The Life Jolie
And to end on something a little lighter, this salad is so delicious. I love adding sweetness to a green salad, plus with the addition of burrata, it’s so good. This would make a perfect light summer dinner for those scorching hot nights you don’t want to cook or top it with a little grilled chicken to add some protein.
