Slice of Life Day 28: Brown Rice and Mushroom Risotto
It’s forecasted to be rainy all day today. And all that rain gives me the excuse to make this delicious recipe – Brown Rice and Mushroom Risotto from the blog, Cookie & Kate. I know, I know, risotto is one of those recipes that takes tons of time at the stove, stirring and stirring. But, this recipe although still takes some time is so much easier!
You actually bake this rice dish in the oven! Right? No stirring for an hour. Pull together the recipe and stick it in the oven and forget it! With brown rice and mushrooms, meat-lovers won’t even know what they’re missing! Pair this yummy brown rice and mushroom risotto with a crisp salad and light vinaigrette and you’ll have a perfect meal!

Interesting! I actually also made risotto last night, a butternut squash and sage risotto. It definitely took a long time but it’s kind of weirdly relaxing to just be stirring and listening to my audiobook!
