From My Kitchen: Grilled Za’atar Chicken

I don’t think it’s much a surprise to my readers at this point how much I love to be in the kitchen. My work schedule is all over the place right now. And my partner and I have opposite schedules right now which means we’re eating pretty late every night. But I’m finding time at least a few days a week to cook a nice dinner.

Grilled Za'atar Chicken

This past week I made Grilled Za’atar Chicken with Cucumber-Watermelon Salad which was fabulous! I found the recipe on the Food Network website after searching for meals on hot summer nights!

The chicken is rubbed in za’atar seasoning which is often found in Middle Eastern cooking and is a mixture of spices including oregano, thyme, marjoram, toasted sesame seeds and salt. It’s aromatic and delicious! We used a roasted garlic hummus that tasted great with the za’atar seasoning and combining the hummus with the greek yogurt made such a light sauce for the chicken. Plus, the cucumber-watermelon salad was so light and refreshing!

My partner and I both agreed we would probably add an Israeli couscous or quinoa side to fill out the meal, but overall the flavors were delicious and leftovers the next day were just as good.
