Books & Cooks Letter H: Horseradish
This year I’m going to be combining two of my passions – cooking and kid lit for Books & Cooks! I’ll be bringing you great recipes based on spices of the alphabet that pair perfectly with kid lit books! Next up? The letter H and zingy horseradish!
Spice: Horseradish
Today, I’m sharing another root spice! Check out my post yesterday about ginger. What I love most about horseradish is that if you get just a little too much it, the flavor zips up your nose and swirls around. It’s great at clearing out sinuses and can be quite spicy if you add a lot to your food. Beef holds up really well to horseradish flavor and you can’t go wrong with a shredded beef sandwich loaded up with horseradish sauce!
Book Review: Lizzie Flying Solo by Nanci Turner Stevenson
I know, an actual horse has absolutely nothing to do with horseradish, but I thought it was a fun connection! Lizzie Flying Solo is about a young girl whose world has been turned upside down as she and her mom move into transitional housing shelter, she attends a new school and had to leave all her friends behind. If only Lizzie could be invisible, then maybe she wouldn’t have to deal with all the changes her family is facing. But, when she discovers a horse stable behind the shelter, things begin to look up. Lizzie loves horses and maybe some new friends and a frightened new horse are just what Lizzie needs to feel more like herself. This is a beautiful story of resilience and strength and although I was never a “horse-book reader” as a kid, I loved this story!
Recipe: Shredded Beef Sandwiches
Today, I’m sharing a recipe that we got from a family friend growing up. I tried to see if I could find something similar online to attribute it to, but to no avail. This is a recipe that is super easy and makes the most delicious shredded beef for sandwiches. Plus, you don’t have to add very many ingredients (and not anything with lots of preservatives in it!).
You’ll need a chuck roast (doesn’t matter the size). Throw that in a slow cooker in the morning with the following ingredients:
- 1/3 cup of white vinegar
- 1 large onion, sliced
- 3 bay leaves
- 1/2 teaspoon salt
- 1/4 teaspoon ground cloves
- 2 garlic cloves, minced
Set it on low for 10-12 hours. Take it out and shred the beef and put it back in the au jus to keep warm.
Build your sandwich with a nice crusty roll, some provolone cheese (I like sharp provolone) and a lot of horseradish sauce. You can buy it prepared as a sauce or more minced. Enjoy!
