Roasted Cauliflower Enchiladas

I’m trying something new on the blog today! I’m going to share a recipe that I tried for dinner last night – Roasted Cauliflower Enchiladas. I love food – eating it, making it, and sharing it with friends and family. Growing up, my parents encouraged us to be in the kitchen, helping cook dinner and always helping to clean up. My parents also encouraged us to try new food and always try something we didn’t like again and again and again. Both my parents are amazing cooks and we grew up making our own pizzas, chopping up stir-fry vegetables, and trying new recipes. With some great recipes recently, I decided to share this tasty treat with my readers!

My partner and I try to eat fairly healthy when I have the chance to cook. After learning about the effects of the meat industry on the environment, we decided to consciously try and eat more plant-based meals. We’re not vegetarian or vegan, but I like trying new recipes and reducing our carbon footprint.

Last night, I was actually able to cook a nice dinner for my partner and me. I usually get home from work around 5:15 (I have the quickest commute in the world!), take my pup for a walk and then get started on dinner. This recipe took a little longer than my usual weekday meals, but it was pretty good.

Recipe Notes

This recipe I found on Gimme Some Oven, a great place for recipes of all kinds! I love, love, love roasted cauliflower, so that’s an automatic win in my book. Here are a few notes from our experience. I replaced the pinto beans with black beans as per my own preference. With the enchiladas, I also made the enchilada sauce recipe (which was really simple) and it was so spicy I had to add more broth to tone it down a bit. I would definitely start with the suggestion of 2 TBSP. of chili powder and then up the quantity after testing it! I did use the chili powder and the chipotle chili powder to give it a great smoky flavor. We topped our enchiladas with cilantro, queso fresco, avocado, and sour cream – delicious!

Overall, I think this is something I’d make it again, we have plenty of leftovers which we love for lunches and the flavors overall were really tasty.
