Slice of Life Day 22: Falafel Tonight, Samosas Tomorrow

I’ve mentioned that I love to cook – when I’m not working or reading, you’ll most likely find me in the kitchen. For dinner tonight? Falafel sandwiches, homemade of course. I found an amazing recipe in Cooking Light that makes falafel very quick and easy to make, plus it’s delicious! Falafel are made using ground chickpeas, garlic, cumin, and a few other ingredients made into a patty and (for this recipe) cooked in a skillet.

I’m super excited about dinner tonight – I’ve been thinking about making falafel for a few weeks now and just haven’t gotten around to it! With warm pitas, tomato, onion, lettuce, and some tzatziki sauce, what more could you ask for?

Tomorrow, I’m excited to try something new… Samosas! They are one of my most favorite Indian foods. (I love potatoes in any shape or form, so I obviously love samosas!) If you’re not familiar, samosas are usually a fried dough pyramid filled with a savory filling, usually potatoes and peas with lots of yummy (and sometimes spicy) Indian flavors. I haven’t found just the right recipe yet, so I’ll have to keep looking. I’m hoping to make a trial run tomorrow and then at some point make enough to freeze so I can have samosas anytime (and not have to run down the street to the local Indian restaurant to pick them up!)

    Falafel recipe is printed!!! I’m excited to try it as I don’t need to deep-fry them! I also love Samosas or Sambusas as some of my students would call them. I have a spring break this coming week and I plan to cook something different! Thanks for the ideas!

    This sounds delicious!!!! Both are things I have never tried, but now I am wanting to! I may try them out over Spring Break!
