Slice of Life Day 18: St. Patrick’s Day Feast
I made a St. Patrick’s Day feast for dinner last night, despite having worked in the garage all morning and then heading into work for a few hours in the afternoon. I got my corned beef in the slow cooker before getting to work on the garage reno, and after work went straight back into the kitchen to make Irish soda bread, mashed potatoes, and a fried cabbage and bacon dish.
And I know, before you say anything, St. Patrick’s Day isn’t that big of a holiday if you’re truly Irish. And the food I prepared probably wasn’t truly Irish either. But, it was a tasty meal with just enough leftovers for lunch today which made me very happy. Plus, with some Irish blood flowing through my veins, I like having something to celebrate!

Sounds familiar! It is fun to celebrate with that feast! Ours looked similar, but I need to find a good soda bread recipe next year (or just get some at the store! HA!) Happy St. Pat’s Day!
