Slice of Life Day 14: Pi Day
What better way to celebrate math, than to eat a slice of pie?!?! In college, my roommate would bring Peanut Butter Pie to school and it was so very yummy! I found a similar recipe and thought I’d share it with you to celebrate 3.1415926.
Chocolate Peanut Butter Pie
Ingredients:
- 25 Oreos
- 4 TB melted butter
- 1 CUP creamy peanut butter
- 1 8-OZ package of cream cheese, softened
- 1 1/4 CUP powdered sugar
- 1 8-OZ tup of Cool Whip
Directions:
- For the crust: Preheat the oven to 350 degrees F. Crush the cookies until they’re fine crumbs. Pour the melted butter over the top and stir with a fork to combine. Press into a pie pan and bake until set, 5 to 7 minutes. Remove from the oven and allow to cool completely.
- For the filling: Beat the peanut butter with the cream cheese until smooth. Add the powdered sugar and beat until smooth. Add in the thawed whipped topping and beat until smooth, scraping the sides as needed.
- Pour the filling into the crust, evening out the top with a knife or spatula. Chill for at least an hour before serving.
*I found this recipe from Ree Drummond on Food Network.
The Slice of Life Challenge is something new I’m trying this month! I’ll be posting brief posts that show a glimpse of my life in story-format. A slice of my life as a librarian and blogger that I hope you enjoy!

That’s what was missing from my day: PIE! (I’m in Norfolk, VA right now for work and I’ll tell you it’s hard enough to find gluten-free bread. I think gluten-free pie would be nearly impossible.)
